Syrup at last!

When the syrup is done, it comes out this spout into the vat. It is then hand tested with a hydrometer to tell if the weight is correct. If it isn't exactly as desired, the computer setting is adjusted.
Good syrup should weigh 11 pounds per gallon.
The white you see around the edges of the vat is the edges of 2 filters.

Hoses bring the syrup to this vat where it is classifed by color. It will be classified as light, medium or dark. Light seems to be the most popular but some people prefer the others.

Finally the syrup is stored in 30 gallon metal barrels. Larger barrels are not used because of the weight. A 30 gallon barrel filled with syrup will weigh over 400 lbs!
Syrup that is not shipped in barrels, is transfered to the bottlers which are really large coffee urns that have been adapted to the purpose.
